How to Make a Ugandan Rolex: The Ultimate Street Food Recipe

The Ugandan Rolex (short for "rolled eggs") is a beloved street food that combines a soft, flaky chapati with a savory egg and vegetable filling. It’s quick, affordable, and bursting with flavor – perfect for breakfast, lunch, or a snack. Here’s how you can make this iconic dish at home!

Ingredients:

1. For the Chapati:

  1. 2 cups all-purpose flour

  2. 1/2 teaspoon salt

  3. 3/4 cup water (adjust as needed)

  4. 2 tablespoons vegetable oil (for dough)

2. For the Filling:

  1. 3 large eggs

  2. 1 onion, finely chopped

  3. 1 tomato, finely chopped

  4. 1 green bell pepper, finely chopped

  5. 1/2 cabbage, thinly sliced (optional)

  6. 1 chili pepper, finely chopped (optional, for spice)

  7. Salt and pepper to taste

  8. 2 tablespoons vegetable oil (for frying)

Instructions:

  1.  Make the Chapati:

In a bowl, mix the flour and salt. Gradually add water and knead until you have a soft, smooth dough.

Add 2 tablespoons of oil and knead again. Cover the dough and let it rest for 15-20 minutes.

Divide the dough into small balls. Roll each ball into a thin, round chapati.

Heat a pan over medium heat and cook each chapati, brushing with oil on both sides until golden brown. Set aside.

In a bowl, whisk the eggs and season with salt and pepper.
